Carolyn's Blueberry Muffins

Mix 1/3 cup sugar and 1/4 cup soft butter or margaine until fluffy. Beat in one egg, Stir in 2 cups flour.

Then take 1/3 cup flour mixed with 4 teaspoons baking powder and 1/2 teaspoon salt, add alternately with 1 cup milk... beginning and ending with four.

Stir in 1 teaspoon vanilla and beat well. Gently fold in 1 1/2 cup fresh blueberries and spoon into greased muffin pans, filling cup 2/3 full.

Next mix 1/2 cup sugar, 1/2 teaspoon cinnamon, 1/3 cup flour and 1/4 cup butter or margarine until crumbly and sprinkle over the muffins.

Bake in preheated oven at 375 degrees for 20 - 25 minutes or until golden brown. Serve warm.

According to recent wellness reports, blueberries are a very nutritious food and full of antioxidants.

Thank goodness few years ago, I planted 4 Blueberry bushes and they are most prolific ... the berries are so sweet and delicious. If you like Blueberries, I recommend you plant a few bushes... they take very little space and very little work...
