Cornish Hens
2 Cornish Hens
1 stick butter
1/2 cup sherry
2 onions
3 stalks celery
6 carrots
4 potatoes
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper
1 cup chicken stock
1 jar mushrooms
Cut hens in half. Melt butter in skillet. Brown hens until golden.
Remove and lay in baking dish. Saute onions and mushrooms in remaining butter.
Into pan stir Sherry, paprika, salt, pepper and chicken stock. Cook 1 minute and pour over
hen and vegetables. Bake 1 hour, or longer, until done. Turn as needed, usually
once.
Bake at 450 degrees for one hour
Serve with salad
