When entertaining, this is a popular dish to serve..... When we have pot luck
Sunday at church, I use this dish often... I double or triple the recipe.
Of course, if when I'm in a hurry, I don't use the crock pot... nor do I
always use the ricotta cheese.
If you are like me and have never liked olive oil, do try the Toscano Bertolli Smeraldo
extra virgin olive oil. Many wellness professionals
highly recommend we use Olive Oil instead of other oils..... it's a little
more expensive; however, you can purchase it at BJs or Sams discount stores
at a good price.
Great on salads too. Try this:
1/3 cup Toscano Bertolli Smeraldo Olive Oil
1/3 cup Balsamic Vinegar
2 teaspoons chopped fresh thyme
1/8 teaspoon pepper
1 tablespoon chopped fresh basil
1/4 teaspoon salt (optional)
I like to combine all the ingredients in a
screw top jar... cover and shake.
