Oatmeal Cookies
1 cup sugar
1 cup brown sugar
1 cup butter
1 teaspoon vanilla
2 large eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups oatmeal
2 cups Frosted Flakes (whole flakes, not bits and sugar at bottom of box)
1 cup of nuts (first choice, chunks of pecans)
(you also may use coconut, chocolate chips or raisins, or any combination that suits you, equaling at least 1 cup total)
Directions:
Cream together sugar, brown sugar, butter (preferably cooler than room temperature), eggs and vanilla.
Add flour, baking soda, baking powder and salt. Mix in nuts. Mix in oatmeal. Toss in frosted flakes and mix. Dough will be stiff and a mixer helps.
Bake at 340°F until golden, about 8 to 10 minutes.
Makes approximately 7 to 9 dozen.
