Potato Wedges

Old Family Favorite

8 Medium Potatoes
4 Tablespoons Oil
1/2 Teaspoon Salt
Dash Black Pepper
1/2 Tespoon Thyme
1/2 Teaspoon Oregano
Dash Cayenne Pepper
1/2 Cup grated Parmesan Cheese
2 Tablespoons Grated Cheddar Cheese

Scrub potatoes well. Cut each potato in half lengthwise - then again into even wedges.

Boil potatoes for 5 minutes in salted water. Drain and pat dry.

Spread potato wedges in a single layer on a lightly greased baking sheet. Sprinkle with oil, spices, and herbs.

Bake at 425 degrees for about 15 minutes or until golden brown and cheeses have melted.

Great with pork chops or chicken.
