Carolyn's Pork Casserole
6 thin pork chops or cutlets,
trim all outside fat
1 cup uncooked brown rice
1 medium onion, sliced
1 cup cabbage, shredded
1/2 to 1 green pepper, chopped
1/2 teaspoon dried sage
1/2 teaspoon pepper
28 oz. canned tomatoes in heavy
puree or stewed tomatoes
1 cup water
Preheat oven to 375 degrees. In deep baking dish, place 3 pork
chops or cutlets; sprinkle rice, half the onion, all the cabbage, then
add the remaining pork chops. Sprinkle with the rest of the onion and all of the green
pepper. Mix sage and pepper with tomatoes and water, then pour over
the pork. Bake 1 - 1 1/2 hour or until rice is done.
